White Peony · Yunnan White Tea (白牡丹 · 雲南白茶) is a 2023 ancient tree white tea, pressed into a 300g cake using traditional white tea methods on old-tree Yunnan material. It's fragrant, naturally sweet, and has a lovely crystalline texture that holds up through steep after steep — this is a cake with real endurance.
Delicate but surprisingly expressive, it opens with hay blossom, apricot skin, honeycomb, and linen, settling into a soft golden liquor that feels smooth, clean, and quietly radiant in the cup. Give it time in your cupboard and it'll keep giving back — deeper layers of honey, beeswax, dried fruit, and floral sweetness tend to emerge with age. Lovely to drink now, and just as rewarding to set aside.
