Top quality, exceptionally crafted matcha, designed for (but not limited to) koicha. Expect complex tasting notes, outstanding mouthfeel and loads of umami.
The teas in this collection is grown in the traditional style, known as 'shizen shitate' (自然仕立て); the tea plants are allowed to grow in a natural, spreading canopy shape, rather than being tightly pruned into low hedges (a common practice in modern mechanized tea farming). They are shaded several weeks, picked by hand and handcrafted with utmost care by true tea shokunin. Some teas in this collection may be micro-milled in Vancouver.

It is, for a reason that escapes our knowledge, not a registered cultivar at the Japanese Ministry of Agriculture and Forestry.
Samidori (さみどり) is an unregistered cultivar, originally from the Uji region, that is very popular for shade grown tea (like matcha and gyokuro).
