The Case for Iced Matcha

Super refreshing, silky... but perhaps not that strong in umami.  Iced matcha offers you an incredible different new way to enjoy your tea.

First timers:  please know that the flavour and aftertaste will be very different vs. traditional (hot, whisked) matcha.  We consider that the following variables account for this difference:

- Cooking:  hot water changes your tea leaves, just like boiling broccoli would make it taste different vs. its raw counterpart.

- Extraction:  hot water and whisking extract are more efficient ways of extraction (of compounds from your tea powder) vs. cold water and shaking.

- Taste bud sensitivity:  human taste buds are more sensitive with lukewarm drinks.

 

Today's Recipe

There are several ways to achieve a good result.  But in the middle of summer, when we all want to be outside, we suggest this very simple method.  

You need:

- Matcha:  2g

- Cold water (or cold sparkling water):  200g

- A thermos, flask or mason jar that has a tight seal (so you won't cover all your friends in matcha)

- A strainer (optional):  this helps to prevent powder clumps and helps the extraction.  If you don't have strainer... shake harder!
