Surprisingly complex for it's age, we were delighted to encounter a demerara sugar like sweetness contrasted by a rich aromatic profile reminiscent of english pipe tobacco. Medium body, smooth texture even with more aggressive brewing.
Type: 熟 (Shou | cooked) Pu Er
Fermentation: piled and matured in bamboo baskets
Harvest: 2016, old tree leaves from Menghai
Additional handcrafting (2020): steamed, pressed into pieces of wild bamboo, roasted and sun-dried in summer.
鱼尾冠 'FISHTAIL CROWN' - behind the Chinese name of this tea.
Also known as 太清鱼尾冠 'Tai Qing Fishtail Crown', it is one of three traditional headdresses in a Taoist tradition; it may be worn only by the head of the Tai Qing school.
Brewing Suggestion
Tea: 8g
Water: 180ml @ 100ºC
Time: 20" (rinse); 5" (steeps 1-3); add 5" to each subsequent steep.
ABOUT THE PRODUCER
Mr. Lu Zhi Ming is the founder and leader at DC Tea, Guangzhou and Menghai. He spends over six months per year in Yunnan, developing close relationships with the farmers in remote mountain villages. He personally sources all of the tea leaves for DC Tea. (ie, harvests and pan-fires) Some of the most select batches are handcrafted by Mr. Ming. DC has won multiple awards all over China and Mr. Ming has one of the best-trained palates we've ever encountered.
