







YOSHIDA SAN'S SEN RYU | YABUKITA MATCHA

This is Yoshida San's creation for a bright, crisp, every day use matcha that is wonderful as usucha, a matcha cortado or sparkling matcha.
Tasting Notes: front loaded vegetal notes and an almost sparkly tannic finish

The Yoshida family embodies our idea of ’shokunin' (職人, literally translated as ‘craftsman’, but in reality, the term carries a deeper meaning of utter submersion in one’s art). Every aspect of their work reflects an elegant simplicity that has been refined over 300 years since their late Edo period ancestor decided to settle down as a tea grower. The family’s art is also recognized by Japan’s government, having named Kisaburo Yoshida (14th generation) as 'Living National Treasure from Japan’. Furthermore, this family is in charge of the tea garden at Kosanji Temple (Kyoto), the oldest tea garden in Japan.
Cultivar:Gokou (ごこう or 五光) was propagated from a ‘zairai’ (seedling) tea plant that grew in Uji in the 1950’s. With dark, rich colour and monster umami when grown in shade, Gokou is a fairly popular cultivar for gyokuro and kabuse tea. It is however, surprisingly not often used for matcha.
Recommendations:
For usucha (thin tea), we find that 2g of Un Ryu on 50ml of water at 75° C yields a delicious brew. If you are fairly new to matcha, please consider adding another 50ml (after whisking). If you want an umami bomb, try 3g of tea on 50ml of water.This tea is sold in 20g re-fill packs, freshly milled and packed by Yoshida San at origin.
