White Tea #2, Shaowu | (For Kombucha)
This is a simple, organic tea from the Shaowu, in Northwestern Fujian Province.
The tea is very light, with floral notes and a hint of spice. There is minimum astringency.
It also brews a bright, lively kombucha with notes of peach. Compared to more oxidized teas, you may find that your scoby produces more yeast, resulting in some funky (in a pleasant way) beer-like hints in your brew.
