ABOUT THE GROWER
Kim Jong Yeol's Balhyocha Saebyok had a baby with a rich Sun Moon Lake red tea. This is the result of 9 steps of oxidization and firing the tea leaves, but withholding the baking process that gives Balhyocha Saebyok its strong chocolate notes. Instead, this tea has more intense fruit notes that linger on the back of your palate.
The grower’s vision: KJY set out to create a standout tea, unlike anything else that he made before. He wanted to create “the one Red”. [Note: in Korea, as in most of Asia, fully oxidized teas are called “red”; in the West, most call them “black”].
