2018 ROLLED ZISUN
Tea Grower’s Notes:Last winter was long and harsh, stressing the tea plants and decreasing the yield of this year’s harvest. The early spring leaves from these old zisun trees (many of them in their 70’s) seemed to suffer the winter more than some of the other cultivars growing nearby; the yields were low and some leaves were marked by frost. The winter also enhanced the sweetness of the tea leaves, yielding less grassy / more fruity notes than in previous years.
Tea Bartender's Notes:This tea is handcrafted unlike traditional Zisun, with a technique more common in the Province of Anhui. There seems to be a more uneven process of oxidization in the leaves, with about 20% having a dark green colour vs. the rest which is light green. The brew has higher umami, with light fruit notes starting to show in latter infusions.
Fun fact: Zisun (purple bamboo) was the favourite cultivar of Lu Yu, China’s “tea saint”. Thanks to that guy, Zisun was treasured as a “tribute tea” in the Tang Dynasty.

ABOUT THE GROWER
Lilly Zhang’s farm is located in a beautiful valley hidden among forested mountains near Changxing, famous for the Zisun cultivar. Since the valley is protected by mountains, a micro-climate is created on this small farm, allowing tea plants to thrive.
