YAME KABUSECHAWATER 55ºC | 131ºF 240ml TEA 1 tbsp | 4g STEEP STYLE 90 seconds | multiple steeps EQUIPMENT Kyusu or glass teapot This is a very interesting, vibrant tea. It is very thick and rich in umami; we recommend brewing it like gyokuro.
Gokou is a (non-registered) cultivar that is popular in the Kyoto region for top grade gyokuro and matcha. It is seldom used in un-shaded teas. We haven't tasted too many examples of this cultivar grown in the southern islands, but this particular batch stood out.
ABOUT THE TEA MAKER
Oishi San's tea factory was established in 1940, a very turbulent period in Japan's history. The company has flourished; Oishi San owns tea fields in the region, but also sources leaves from a wide diversity of micro-farmers, finishing the tea at his facility in Yame.
