ASANOKA TENCHA | HOSOI KENTA
Note: Not available in-store until Saturday, September 24th, 2022.
TENCHA (碾茶) is the term for the beautiful 'tea flakes' from from which MATCHA (抹茶）is crafted. It is not exactly designed to be brewed as loose leaf tea... but it brews a wonderful drink!Tasting notes: sweet potato, grilled and buttered corn.Abbreviated description of the crafting process: tencha is shade grown (like gyokuro) to enhance umami and the vibrant green colour that we love in matcha. The leaves are steamed and dried to produce 'aracha' (or course tea); you will recognize aracha by the presence of a few twigs. Aracha goes through a final process called 'shiage', removing the stems and veins of the leaves, and cutting the leaves into smaller (relatively homogenous) particles..Grower: Hosoi Kenta. His family began farming tea in the Meiji Era, in Wazuka (one of the most traditional tea-growing regions in Kyoto). He only started farming tea for tencha 10 years ago; his favourite cultivar for this purpose is okumidori. Hosoi San's main passion is farming; he believes (and we couldn't agree more) that healthy earth and plants are the basis for mind-blowing tea. This August, we were finally able to visit Hosoi San and his beautiful tea fields. For many years, Hosoi San has been growing tea and supplying his tencha to larger companies. These companies purchase tencha in auctions; they masterfully blend several batches, aiming to create products with very consistent flavour vs. previous years.
We think that Hosoi San’s work deserves to be appreciated on its own! These beautiful Asanoka trees grew in rocky soil, surrounded by a cedar forest. Deer often come to munch on Hosoi San’s tea trees.Cultivar: Asanoka is a registered Japanese cultivar, created in the 1960’s by blending Yabukita with a Chinese cultivar called 平水1号 (Pingshui #1). We have not tried to many teas made with Asanoka, but Hosoi San is very excited with this first production of Asanoka in his tea fields. So are we!
