Tasting notes: wild herbs, green apples, concord grapes
Kim Jong Yeol crafted a delicious tea that is unlike anything else that we've tried this year. This tea is a late spring harvest (after May 20), picked when the sunshine was finally warming the slopes of Mt. Jiri after a very icy spring.
The leaves were picked by hand by Kim Jong Yeol personally and his family. The handcrafting technique is similar to that of Zisun (from Changxing, China) and Kamairicha (from Kochi, Japan). However, the scrawny, beautiful, >70 year old heirloom tea trees on the slopes of Mt. Jiri yield a very different flavour.
Mr. Kim is one of the most detail obsessed tea growers that we've ever met. He is also a most generous person that has kindly supported the O5 project since 2009.

About The Grower
Kim Jong Yeol is one of our favourite farmers, anywhere. He left a corporate life in Busan to work on his family farm in Hadong. Some of the trees are over 80 years old, spread randomly across hill slopes. The teas are personally handcrafted in micro-batches. Each lot is unique; every lot is consistently outstanding.
