  • Reminds us of: 

    A simple, rustically charming green; extracting a tasty, thirst quenching drink with this tea requires little work.

    This tea is a second harvest, picked 5 days after its sibling (Zisun - Yin Shuang).  The young leaves are very evenly hand-picked; some show a some degree of oxidizing (with a yellow-green hues), having been picked in a warmer day and not processed immediately.  While this definitely discards them as 'competition tea', it is a perfect example of what tea growers drink to quench their thirst when working intensively in the fields.

    Cultivar:  Ying Shuang (迎霜 - coarsely translated as 'welcome the frost') is brighter and greener, with mild yet very pleasant astringency.  Zhang's 2021 Yin Huang was harvested on March 23.

    Grower:  Zhang Wen Hua is a farmer and a scholar, devoted to preserving old tea traditions. Her tea trees, many of which are over 80 years old, are located in a valley surrounded by mountains, covered by protected national forest. She is very happy to share tea and the culture around it.

    Brewing Guide

    We recommend the technique often called 'Grandpa Style' that most tea growers use while working on the fields:  adding hot water to a pinch of tea leaves, and sipping directly from the cup, filtering with your teeth - as well as eating a leaf or two.

    Should you want more specifics for this particular tea, we suggest: in a cup (or glass) with 3g of tea, add enough water at 85ºC to cover the leaves completely and swirl lightly.   After perhaps 45 seconds, when the leaves are hydrated, add another 200 ml of hot water (also ~85ºC).  Allow the tea to brew for another 2 minutes.  

    After drinking 75% of your tea, you may refill the cup with boiling water..
